Energy Bites

Lately, I’ve been working on getting healthier. I’ve been working out more often, seeing a trainer once a week, and watching what I eat like a hawk. (Sometimes “watch” what I eat simply refers to me actually watching the less than healthy foods go into my mouth, but still…nobody’s perfect, right?)

So, while I’ve been focusing on what I eat, I’m also trying to make sure that I squeeze in two healthy snacks today that will give me energy to get through the morning or afternoon without raiding my pantry for anything I can find. I love the energy bite craze that is going on right now. In my opinion, some of them are basically just eating raw cookie dough without all of the sugar, but lots of them seem to be truly good for you and will help give you a boost to get through your afternoon slump…if you’re anything like me, that is.

energy_bites_1 I made these energy bites the other day using this recipe. They were simple, went together quickly, and the recipe made quite a few bite sized portions. I’d totally recommend this recipe. I wouldn’t, however, recommend eating the entire batch in one day. Not that I did that.

Don’t judge.

Or do. I probably deserve it.

Anyway, this recipe requires ingredients that you most likely have on hand and keep for about a week after they’re made, so it’s great to have on hand when you need a quick pick me up in the middle of the afternoon. Or the morning. Or the night…go ahead, I won’t tell.

Seriously, I’m such an enabler.
